    I make tortillas regularly and don’t have a press. I use a ziplock bag, cut the sides so that it can open up and be folded over the dough, then roll them out with a rolling pin. I’ve also used beers (full, so there’s weight in the can), jars, anything really. I’ve made them without the plastic, but it sure simplifies things. Homemade tortillas are a total game changer to your taco skills.

    I lived on Pensacola Beach when the blackened redfish thing was going on and it’s true, regs were tightened severely for a while. Anyway, before all the fancy blacked seasonings came along we made our own and butter and sugar was included. We also used 2 cast iron skillets to make sure one was always red hot. We would flip the fish from one pan into the other red hot pan. We blackened chicken that way too and it was great!

    I’ve had turkey hash and beef hash. Grew up in southern Indiana. Ours had the same stuff with a little chopped celery in it. Absolutely tore it up!!!

      This is an OLD recipe. These were made by both of our grandmothers. It is a meal in itself. The taste is amazing. The savory/sweet combination is amazing. Old timers call them calico beans or cowboy beans. Many a church function has been graced with grandmother’s recipe. Cut back on the sugar if you want, but we’ll continue this dish as is. Thousands of folks have had this dish in our catering business, and we’ve yet to have a negative comment. 😎
